The Caramella di Borgo Capietaglio is our contemporary take on the traditional “Casoncello Bergamasco”: an elegant, hand-folded pasta stuffed with braised meat, sweetened by pear and embellished with a delicate aroma of amaretto.

The recipe: an enveloping balance of sweet and savoury, intensity and softness.
Slow-cooked braised beef, fresh pears, and a touch of amaretto come together in a harmonious filling, wrapped in thin, handcrafted pasta and served with a light jus. Every detail is thoughtfully crafted to highlight the quality of the ingredients.
